Linguine with diced Tomato and Garlic
5 oz. Cooked (al dente) linguine
1 medium sized tomato diced
1/4 teaspoon fresh crushed garlic (or more if you want)
4 leaves of fresh basil, chopped
1/2 teaspoon of chopped shallots
2 oz. Semi dry white wine (your choice)
Dash of olive oil
Salt and pepper to taste
Preparation
Into a saute pan pour a little olive oil.
Add the tomato, garlic, and shallots.
Cook over medium-high heat, about 4 minutes while stirring.
Add the wine.
Reduce over medium-high heat, about 1 minute.
Taste add salt and pepper to liking.
Add the linguine and toss with the other ingredients.
When steaming hot, place on plate and serve immediately.
Garnish with fresh chopped basil.
Wine suggestions:
Pinot Grigio
Chardonnay
Any semi-dry white wine
Kitchen notes
Top the pasta with some grilled shrimp, serve with a side of garlic bread.
